Timeshare Cooking-Favorite Chicken Dishes

  • Because we travel so much, we occasionally like to eat in.  This has several advantages:  we eat healthier, eat smaller portions, and it’s less expensive. Also, if we have friends coming to stay with us in our timeshare, it’s usually nice to have a meal prepared for them when they arrive.  This gives us time to catch up in a leisurely manner rather than racing around to find a good restaurant.

However,  some areas do have better restaurants than others.  When we go to Las Vegas, we rarely cook because there are so many retaurants and buffets that are reasonably priced.  But we have been to some places with very few eating options.  One that comes to mind is the Wyndham Fairfield Bay in Arkansas.  When we stayed there 6 years ago, there was a Pizza Hut on property, but anything else was quite a drive.  At night, the Ozark roads were dark and winding, so we ate in a lot.

When we cook, we tend to use a lot of chicken, both fresh and canned. It’s fairly convenient, and most everyone likes it.  For our Hawaii trip last year, we bought a large bag of frozen chicken breasts and used it in different ways for 5 meals for the two of us.  The most important things to consider when cooking in a timeshare are that the meal needs to be easy, taste good, and use few ingredients. With those things in mind, here are a few of our favorite recipes:

Grilled Chicken and Camper Potatoes (Actually, these are 2 separate recipes, but they go together well.)

  • 4-6 boneless chicken breasts
  • 1 c. margarine (divided)
  • 2 T. worcestershire sauce
  • 5 or 6 potatoes (skin on or off)
  • Sliced onion (if you have it)
  • Lawry’s salt
  • Pepper

Scrub potatoes (or peel) and cut into 1/2 in. thick slices.  Put in casserole or glass pan.  Add sliced onion.  Season with Lawry’s salt and pepper to taste.  Cut 1/2 cup margarine into 4 or 5 pieces and put on top.  Microwave about 20-25 minutes on high until potatoes are tender, stirring every 5 minutes or so.

When you begin cooking the potatoes, begin grilling chicken.  Use the other 1/2 c. margarine, melted, mixed with Worcestershire  to baste the chicken breasts when you turn them,  about every 5 minutes.  Season with salt and pepper.  Chicken should be done in about 25 minutes.  (Just like the potatoes!)

We have had people rave about this meal, and it is so simple!

Another great recipe for timeshare cooking is Cornflake Chicken.  Actually, this is one of our old, pre-timeshare standbys, but it’s easy, tastes good, and uses few ingredients.

Cornflake Chicken

  • 4-6 boneless chicken breasts
  • 4 c. Cornflakes, crushed, in a big Baggie
  • 1 tsp. Lawry’s salt
  • 1/4 tsp. pepper

Put crushed Cornflakes,  Lawry’s and pepper in Baggie.  Rinse chicken breasts and shake off excess water.   Shake one at a time in bag of crushed Cornflakes and lay in a foil-lined 9 x 13 pan.  (The foil keeps your pan cleaner.)  Spread some extra cornflakes from the bag on top of the chicken.  Bake in a 400 degree pre-heated oven for about 30 minutes.

Cornflake chicken also teams up well with Camper Potatoes.
